Peanut butter chocolate chip recipe

Julia's Peanut Butter Chocolate Chip Cookies 002.jpgIf you read the Bargain Hunter frugal and fun gift guide in today's paper, here is the recipe for my fabulous peanut butter chocolate chip cookies. I'll be making them for a lot of friends this year so if you make them you are not alone!

Ingredients:
3 1/3 c flour
3/4 t baking soda
1/2 t salt
16 T (2 sticks) butter at room temp or melted and cooled
1 1/4 c packed brown sugar
1/2 c sugar
2 eggs
2 T vanilla
3/4 c peanut butter
16 oz (1 bag) chocolate chips

Directions:
Heat over to 325. Whisk flour, soda and salt in medium bowl...

...In a large bowl beat butter and sugars for 2 minutes with an electric mixer. You want it really light and fluffy. Beat in eggs one at a time, then vanilla, then peanut butter, mixing after each addition until combined. By hand, stir in flour mixture in three parts. Add chocolate chips and stir until just combined.

Scoop the dough onto greased cookie sheets. I like to use two big soup spoons to get a consistent shape and avoid eating all the dough. Cook about 11-12 minutes or until cookies are just about to brown. Leave them on warm sheets another 2 - 4 minutes then transfer to a cooling rack.

Serve the cookies warm with milk and you will agree, it doesn't get much better than this.
